Beta-glucans, briefly
The compound family most often discussed in this part of the mushroom category is beta-glucans — polysaccharides that make up part of the fungal cell wall. They are the reason extract ratios and standardisation percentages appear on mushroom labels at all, and the reason hot-water extraction is the conventional preparation method: beta-glucans are water-soluble, and the chitin around them needs breaking down first.
A meaningful label states a beta-glucan or polysaccharide percentage. A label that states only total mushroom weight says nothing about how much of that weight is the material of interest.
